It's the end of the gardening season and although I won't miss the work of weeding and canning, I will miss the flavor of newly picked green beans, corn, tomatoes and other choice veggies. You know how you feel in January....you just wish you had a big red tomato for your salad or sandwich. The corn from the can is just not that good, you wish you had a cob to gnaw on, and the zucchini that you fried up with a little butter and Parmesan cheese is only a memory. It seems a looooong time until August or September again.

I cooked up the last picking of green beans in the pressure cooker for 3 minutes. I did this while Wayne was at work so I could eat them all by myself. He honestly didn't care or I would have waited....maybe.

If you don't have a pressure cooker, you need to get one, really! I have used one for many, many years. Now I have to tell you that I did have one blow up on me when I was a little girl but the accident was my own fault and I have never, repeat NEVER heard of one just blowing up because it was a faulty cooker. It only happens when you do some bonehead thing like I did when I was a kid. I really didn't know how to use it and I somehow pried the lid off before the pressure had gone down. Mom still can't figure how I got the lid off as it is very hard to do when the pressure is up. There were potatoes all over the walls and floor and I was burned but I don't have any fears about using one at all. I digress.

Anyway, the beans come out with all their nutrents, and are so flavorful and so tender that they practically melt in your mouth. I also cut up a big red tomato and added a spoonful of cottage cheese in a bowl and there it was.....a gourmet meal fit for a queen. Wayne anointed me Queen of our home a few years ago so it was a fitting lunch. Refer to this picture in January and tell me how right I was and that you ran out and got a pressure cooker.

I got a good laugh out of your header on the blog and then this post...dreaming of garden fresh veggies is something I do too and I have been wanting to get a new pressure cooker too. Mine bit the dust !

I don't have a pressure cooker and have never used one, ever. I also didn't have a garden and missed it so much. Luckily, my daughter in law and sister in law took pity on me and brought me cukes, tomatos and zuchinni, my favorites.

I used to have a pressure cooker and I loved it. I don't really know whatever happened to it. . . Your meal looked beautiful and sounds wonderful!
