March is National Peanut Butter month. Now this is a month I can sink my teeth into.
I LOVE PEANUT BUTTER...only Jif please. I have a peanut butter sandwich 3 times a week. I measure it out to 2 tablespoons because it would be easy just to pile it on. Add Wayne's homemade three-berry jam and voila....perfection.
I would like to have peanut butter cookies three times a week too but I don't. I was so glad that the peanut butter item recall didn't include Jif. I don't know what I would have done.
Ah yes, a peanut butter sandwich and a glass of milk. Now, that's a gourmet treat. Remember my peanut butter/ chocolate chip recipe from a while back? Here it is again for your reference. Make them in March or you won't be patriotic. Remember this is a NATIONAL thing we are talking about.
Peanut Butter Cookies
375 degrees for about 11 minutes but watch and don't over bake, in fact under bake if you want them chewier.
Mix together:
1/2 c. sugar
1/2 c. brown sugar
1/2 c. peanut butter
1/4 c. shortening
1/4 c. softened butter
1 egg
Add:
1 1/4 c. flour
3/4 t. baking soda
1/2 t. baking powder
1/2 t. salt
Stir in chocolate chips if desired
Mix together and bake on cookie sheet ( I spray with PAM first)
Now as you know, if you break them apart before you eat them, the calories fall out so enjoy!

You KNOW I can't argue that! I heart a good PB&J with a tall glass of milk....preferrably chocolate!
